Here’s how it’s done: Season a rack of ribs with salt & pepper and place on baking sheet. Give them a quick 5 minute broil before turning down to 150°C (300°F). Let them go for 1½ hours, slather with sauce and cover. Repeat this every 20 minutes for 1½ hours. Serve with sauce on the side for dipping.
